Cold Party Day

Today was Cold Party Day. Once a year my peeps and I get together in our friends' cold basement and have a potluck, the condition being that everything we bring is cold. No hot foods allowed. I don't think this year has been any hotter than any of the previous years, but it sure feels like it. I forgot my camera, so I don't have pictures, but rest assured the feast was decadent, and a good time was had by all. Screaming children in a concrete basement notwithstanding.

In honor of Cold Party Day, I'd like to share the recipe I brought:

Lime Ice Box Pie

Ingredients:
- One ready-made pie crust, I prefer the Keebler Shortbread, but you can use vanilla wafers or graham cracker; whatever floats your boat.
- One 8-oz. package cream cheese, softened
- One 14-oz. can sweetened condensed milk
- One 6-oz. can frozen limeade concentrate, thawed (you can use lemonade, or try one of the Bacardi mixers, again, whatever rings your chimes.)
- One 4-oz. container whipped topping, thawed. (I couldn't find a 4-oz. tub and had to buy an 8-oz. tub. Oh well, like anyone can ever have too much whipped cream.)

Directions:
- Beat cream cheese until fluffy in a large mixing bowl; gradually beat in sweetened condensed milk and juice concentrate.
- Fold in whipped topping.
- Pour into pie shell.
- Chill 4 hours or until set. You can use the extra whipped topping as a garnish if you'd like.

This weekend Sandy had a 30% off all yarn sale at Knitorious. It was kind of crazy. I worked all day Saturday, and most of my sales were over $100, where I'd usually have one or no sales over $100. I usually get a 25% discount, so it wasn't frenzy-inducing for me, but I felt I should buy something, and since I don't have a ton of sock yarn, I bought some gorgeous Opal. The desire to start a new sock with it ran deep, however, I knew that if I put aside the second gray Uptown Boot Sock I'd never pick it back up. So I've been knitting like this:

I knit on the gray sock while thinking "as soon as you're done with this sock you can start on that."

Self-bribery. Nothing like it. We'll see how long it lasts. So far, it's been amazingly effective.

Socks are good, oh yes they are. The pie sounds pretty good too!
